NYC’s XI Madison Park Restaurant is completely vegetarian

One of the world’s most acclaimed restaurants, Eleven Madison Park, has announced its menu to be vegetarian, according to a statement by chef-owner Daniel Hamm on Monday.

In An exclusive interview with The Wall Street Journal, The Swiss-born chef said, “If XI Madison Park is really at the forefront of food and culinary innovation, then it is clear to me that this is the only place to go further.”

According to their website, the relaunched menus are described as “eight to 10 course menus” in the main dining room. The three-Michelin Star restaurant in 24th Street and Madison in Manhattan will reopen for service on June 10 after it was closed during the epidemic.

Hmm acknowledged that their tradition of serving milk and honey along with coffee and tea would still be provided, noting that they would not technically be 100 million vegetarians.

Kadam sets a new precedent in the world of fine dining, where some are committed to plant-based ingredients. Earlier this year, an acronym for French restaurant ONA, Origin of non-animation

(“Animal-free origin”), at Arras, near Bordeaux, was the first of its kind in the country to receive its first Japanese star. Last year, New York City’s vegetarian eatery NIX also earned prestigious honors – just before it was shut down due to the shock of the epidemic.

Hmm told NPR that he began to think more honestly about health and sustainability, while the restaurant closed last year.

“The way we cooked our food, the way we are consuming our food, the way we eat meat is not sustainable,” he said. The 45-year-old restaurant helped feed working and undernourished families across the city last year, a venture that continued into 2021.

Despite the average $ 500 price on a meal at XI Madison Park, Hmm assured that the culinary experience would remain on top.

“Guests have never come to us just to eat steak or shrimp,” he told NPR. “They have always come to us to be on a journey.”

As usual, hmm said, “Of course, it’s all about the deliciousness in the end.”
